HEALTHY PANCAKES WITH APPLES


Some of my friends have been asking for healthy recipes to start new years detox regime. So I took a pancake recipe and swapped some ingredients to make it less guilty pleasure and more healthy boost. I ended up with this delicious fluffy, cinnamony pancakes with apples. I used just honey to drizzle over the top and the fruit. You could also use Agave syrup, which is now available in most supermarkets. If you want to go even more healthy, opt for sugar free almond or oat milk and instead of sugar just mix in two tablespoons of honey.


Check the recipe below to treat yourself to healthy but luscious breakfast. Let your imagination run free with the toppings. Natural yogurt, chopped nuts or any fruit you love.  I could only eat six of those as the wholemeal is much more filling, higher in fibre and tastes of nuts.


You will need :
2 cups of wholemeal flour
3 tablespoons of soft brown sugar
2 1/2 teaspoons of  baking powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon cinnamon
Pinch of salt
1 1/2 cups of milk, if you think it's too thick add a bit more
2 eggs
1/4 cup of melted butter
2 medium apples, grated

First melt the butter and let it cool to room temperature. Grate the apples, you can peel them if you prefer.
Place the flour, sugar, baking powder, soda, cinnamon and pinch if salt in a large bowl and mix lightly. Add the milk, beaten eggs and the cooled butter, then stir with a fork until no dry patches remain. Add the apples and mix until combined.
Place a non stick pan over a medium heat. Let it get hot then spoon a small amount of mixture in and let it spread around. Cook for about 2 minutes, or until bubbles appear on top, then the flip to the other side with spatula. The other side cooks much quicker so keep an eye on it.
Keep the pancakes in warm oven if you wish, until you're ready to serve.
Prepare all your toppings and tuck in,
